紅茶キノコ (kōcha kinoko)

red tea mushroom most commonly known as "kombucha" in the usa.

ingredients

  • 1qt water
  • 500mL plain kōcha kinoko
  • 70g sugar
  • 7g oolong tea
  • cheesecloth
  • elastic band or string
  • wide mouth glass jar

instructions

before you can brew kōcha kinoko you will need to grow a "mother" or scoby. we can do this by inoculating some sweet tea with a bottle of already brewed tea.

  1. boil water
  2. when the water is boiling add sugar
  3. when sugar is dissolved steep tea
  4. cool tea to room temp
  5. combine with plain kocha kinoko
  6. fill glass jar with mixture, cover with cheesecloth and secure with elastic or string
  7. fermet until a red-white scoby forms on the surface at least 0.5cm thick. you may need to brew more sweet tea to feed the culture.

now that we have a scoby, we can start brewing!

  1. boil water
  2. when the water is boiling add sugar
  3. when sugar is dissolved steep tea
  4. cool tea to room temp
  5. add tea to the jar holding the scoby
  6. cover with cheesecloth and secure with elastic
  7. check brew daily with a straw until desired flavor is present
  8. transfer no more than 80% of the brewed tea into resealable glass bottles for secondary fermentation.
    • it is VERY important to leave enough tea to feed the scoby between batches. if you don't, the scoby will die and you will ll have to start over.

flavored tea

kōcha kinoko is delicious on its own, but you can mix the brewed tea with fruit juice and other flavors to create different flavors.
